The incumbent is a Research Chemist in the National Center for Agricultural Utilization Research,
Functional Foods Research (FFR) Unit in Peoria, Illinois. The overall mission of FFR is to develop
technologies that produce bioactive food ingredients with health benefits beyond basic nutrition and to
create value-added food and nonfood products from low value agricultural resources and wastes.
The incumbent is responsible for conducting innovative research that leads to the successful completion of three objectives:
1) Identify and characterize phytochemicals and other components from agricultural
products and co-products, which can be utilized in the development of new bioactive food ingredients,
industrial chemical synthesis feedstocks, and other plant-based products;
2) Develop technologies to convert agricultural feedstocks into value-added bio-products and food ingredients; and
3) Apply the principles of Life-Cycle Analysis (LCA) or similar framework to quantitatively assess the environmental and economic sustainability of developed innovative food ingredients, renewable products or technologies and potential benefits. The project goals include the development of convenient and reliable methods for phytochemical discovery and high-throughput methods for measuring amounts of known chemicals present in plant tissues.
